Brownies on the Char-Griller



  • 3/4 Cup plus 1 teaspoon all-purpose flour
  • 1/2 Teaspoon kosher salt
  • 1/4 Teaspoon baking soda
  • 200g Unsweetened chocolate, chopped
  • 1/2 Cup salted butter, plus more, melted, for greasing skillet
  • 2 Teaspoons canola oil
  • 3 Large eggs
  • 1 Cup packed light brown sugar
  • 1 Cup granulated sugar
  • 2 Teaspoons vanilla extract
  • Vanilla ice cream (optional)

Get ready to dive into the gooey chocolate center and experience the rich flavours you can only get from grilling this festive season.


  1. Preheat the grill to 350 °C.
  2. Mix together all of the ingredients until smooth and spread the batter in a greased 26 cm cast iron skillet. 
  3. Place the skillet directly on the preheated Char-griller grill grate and close the Char-griller. Bake for 30-40 minutes (or until a wooden pick inserted in the center of the brownies comes out almost clean). Do not over bake in the grill, as the hot skillet will continue to bake the brownie as it sits.
  4. Top with vanilla ice cream. Serve warm. 
  5. This serves eight people.
